Tell me I am not the only one who loves summer? Living in the mountains of Maryland, winter can be long and harsh. I long for warm weather and cookouts – it is one of my favorite things about the season.
Unfortunately, everyone in my family gets tired of cookouts, they seem to think we eat the same foods over and over. Even though, I pretend to not know what they are talking about, I totally get it. Cookout food gets boring after a while. That’s why I like to create my own little twist on BBQ’s. Instead of the hamburgers and hotdogs, I like something that makes me feel like I’m cooking, but requires little work – and is perfect for cookout season.
My BBQ Chicken Kabobs and Grilled Sweet Potatoes are always a hit at cookouts. And, would you believe they are so easy to make?
I will warn you, though, this delicious recipe is very messy, so I suggest making sure you have plenty of VIVA® Paper Towels on hand because BBQ’s are no match for VIVA®. With VIVA® Paper Towels, you can grab even more sauce at your BBQ because cloth-like VIVA® towels can handle it!

BBQ Chicken Kabobs and Grilled Sweet Potatoes
This delicious twist on BBQ is so simple, but so delicious that your friends and family won’t miss the traditional BBQ foods while you are cooking out. Although, these BBQ Chicken Kabobs don’t take long to put together, I do suggest getting the chicken ready ahead of time, so it has that nice, tangy BBQ flavor when you’re ready to eat it.
- Kabob Skewers
- Boneless Chicken Tenders, cut up in small chunks
- Sweet Peppers
- BBQ Dry Rub
- Potato with skin
- On a plate, put BBQ Dry Rub on chunked chicken tenders.
- Let chicken sit in fridge for 12 hours
- Cut your sweet peppers, potatoes, and onions into squares, or large chunks
- On your kabob skewers layer with sweet pepper, chicken, potato, and onion. Repeat until skewer is 1/2 way full.
- Place skewers on grill -(if using tin foil, spray some cooking oil, so kabobs don't stick)
- Cook until chicken is done and potatoes are soft.
- Serve and enjoy

These grilled sweet potatoes are a twist on the traditional baked potatoes you usually serve at BBQ’s. These sweet potatoes are so easy to make, and even more delicious to eat, that you may just decide to make sweet potatoes all the time after eating them just once.

- Sweet Potatoes Prepare as many as desired
Peel sweet potatoes
Slice into .5 inch slices
Grill until sweet potato is tender
Serve and enjoy!
